I tried tofu for the first time yesterday, and as promised it didn’t really taste like anything. I added it to some stir-fry, which was ok. It just had a weird mushy texture, but no real taste. I got the firm kind, but I think the extra firm kind would have worked better (it’s also what the stir-fry package recommended). So I’m going to wait to pass my judgment on tofu until I try the extra firm kind and try it in some different recipes.
Other than that, there’s nothing really to ‘report’. I’ve really been enjoying the whole veg*n thing. As far as I know the only thing that I have consumed at all is honey and that’s very rarely and only because I am finishing off this loaf of bread. I am still working on the food timing thing so that I don’t get really hungry about an hour before lunch. I thought I was doing well towards the end of last week, but I found myself starving earlier today. I also still have a long list of other foods that I still want to try. But I guess I have the rest of my life to do that, so I’m not in a huge hurry.
Random side note: oatmeal + frozen blueberries + ground flax seed + pinch of cinnamon = best breakfast ever.
I don’t know if you did this or not, but make sure that you press the tofu. This will get all the bland water out of it so that the wonderful flavors of the other stuff will be soaked up.

Try the following marinade/sauce:
3 tablespoons balsamic vinegar
2 tablespoons soy sauce
2 tablespoons ketchup
(These are just guesses, I just dash it in until I see enough liquid to work with)
Beat together well and add to stir fry. After all the veggies look cooked to your taste, mix together 1/4 cup cold water with a tablespoon or so of cornstarch. Add to the stir fry and stir until it starts to thicken/glisten.
Even my anti-tofu husband was converted with this recipe!
Here is my Super Oatmeal Concoction(one bowl):
1/2 cup quick cook oats
1 cup plain or vanilla soy milk
hefty spoon of ground flaxseed
good dash of cinnamon
Cook according to your microwave strength. This keeps my tummy happy all morning (with maybe a pit stop for some nuts or sunflower seeds) Enjoy ~Anna

Yeah, you have to try different marinades and styles of cooking before you know for sure if you like tofu. In fact, the best thing to do is probably to go to a restaurant that serves asian food and that is veg friendly, because then you can taste the result of the experts!
Pressing the tofu is great advice, and another way to cook it is to slice it and bake it in its marinade (one of my favorites is with tamari or soy sauce, molasses, cumin, red pepper flakes, if you like it spicy) – it will have a very different texture than if it is stir fried or used in a soup, and the flavor of the marinade tends to be stronger when it has been baked. If you freeze it before marinading and after pressing, it will have yet a different texture after you thaw it. (and after thawing, marinade and cook however you want – the texture will be “meatier”, whatever that means!)
The cool thing about tofu is that it is so versatile! There are many ways to cook it, it can have many different textures, you can use just about any marinade you want…and then if you use silken tofu you can use that in desserts in a whole other range of uses – to make a pudding, to substitute eggs…

When I first tried tofu I wasn’t thrilled and a little weirded out but now I love making this tofu scramble with onion, green bell pepper, tomatoes, pinto or black beans, dash of garic powder and I eat it on toast. Add a side of hash browns and you have a killer breakfast. It’s also good anytime with tortillas too (sometimes I also add corn). Maybe the beans are a little odd for a “scramble” on toast, but tastes good to me.
I just throw it all in a pan with a little olive oil and cook until the tomatoe starts to break down well. The tofu itself doesnt get terribly seasoned but when you eat all of it together in bites with or without toast it is so good. For added flavor butter your toast too. I use Smart Balance Lite (the regular has dairy but “lite” is vegan).
